          Cherry Coconut Tart

Ingredients
.
Base:
- 80ml coconut milk
 
- 1 egg
 
- 3 tbsp honey or syrup
 
- 1 tbsp coconut oil

Method
.
- Crumble the bars into a mixing bowl, then stir in the remaining ingredients, adding a splash of hot water to help the mixture stick together
 
- Line the bottom of a small tart dish with greaseproof paper, then pour the mixture in and press it firmly around the dish to form a tart case 
 
- Bake for 12-15 minutes at 190degC 
 
- Whisk the filling ingredients together, then pour into the tart case. Bake for another 15-20 minutes until the tart is golden and the filling is firm to the touch
 
- Leave to cool completely, before using a knife to ease the sides of the tart away from the dish and turning the tart out onto a plate
 
- Divide into 6 portions and serve
